Veggie Sandwich

  • Sprouted bread (toasted)
  • Sliced yellow, orange, or red bell pepper
  • Sliced white, sweet, or red onion (or scallions)
  • Arugula
  • Cilantro
  • White Mushrooms
  • Raw Cheddar Cheese (substitute other hard cheese)

If you have a toaster oven, try melting the cheese on the bread, then adding the mushrooms when it is nearly done.

Condiment suggestions: Veganaise, hot sauce.
